I would like to introduce you to the newest member of our cupcake family!  I made this cupcake yesterday and it is SO delicious that I just had to add it to the menu! The cupcake starts with an opened Oreo cookie on the bottom, next is the chocolate cupcake that has just a hint of sweetness to balance out the Oreo cookie buttercream icing and it’s topped with 1/2 an Oreo cookie.  DELICIOUS! Red velvet~the “little black dress” of the dessert world.  I’ve always been fascinated by this type of cupcake. When I was given the go-ahead by the customer to “make whatever you like” I took it as an opportunity to try them out.  I am so glad I did.  Aside from adding a bit more red food colouring next time I wouldn’t change a thing about the recipe.  I think I’ve found my new favourite cupcake!  *Red Velvet Cupcake and Cream Cheese Icing*
